Heat the oven to 230°C. Line a rimmed baking sheet with foil, then prick each eggplant several times with a fork so steam can escape during roasting.

Transfer the hot eggplants to a colander set over a bowl. Split them lengthwise and let the flesh drain for 10 minutes, then scrape the flesh from the skins and discard the skins.

Mash the drained eggplant flesh with a fork until mostly smooth but still slightly textured. Avoid blending completely smooth; a little texture gives the dip character.

Mix in the tahini, lemon juice, grated garlic, cumin, and salt. Stir until the tahini is fully incorporated and the mixture looks creamy.

Gradually mix in the olive oil. Taste and adjust the salt or lemon juice; the finished dip should be smoky, nutty, bright, and loose enough to spread.

Spoon the baba ganoush into a shallow serving bowl. Make a small well in the center, drizzle with olive oil, and serve at room temperature with warm pita or vegetables.
